Add apps to custom build

So is there a way to add apks to a source build before it's built or maybe change it so it's holds before making the system.New.dat so the user can make changes then the build resumes? Im trying to find a way to add apks without having to unzip, convert the dat to img, mount img. Convert back to dat rezip,
